CRAFT MEADS and HONEY WINES
It is believed that traditional mead was the first alcoholic beverage ever made. While making mead and wine are similar, mead uses honey instead of grapes as the starch source. Humbiont Fermentary co-ferments its wildflower honey with water, yeast, local fruits, botanicals, tannins, teas, and birch sap. Unlike traditional wine, mead’s feedstocks are not as vulnerable to the impacts of climate change as grapes. Humbiont Fermentary’s signature meads include Pemmican, Hydromel, Melomel, Love Potion, Ginger Bay, Cherry Melomel, Traditional, and Wild Tradish.
OUR PRODUCTS
Hydromel (a honey-fig-lemon wine with natural flavor): This wine was co-fermented with local raw honey, dried figs, lemon juice, and black tea. It is one of our dryer expressions.
Dry Table Melomel (a honey-cranberry-lemon wine with natural flavor): This honey wine was co-fermented with fresh cranberries and lemon juice to create a balanced, tart, dry, and acidic experience.
Love Potion (a honey-grapefruit wine with natural flavors): This honey wine is a bold and bittersweet melomel that was co-fermented with fresh-squeezed grapefruit juice, as well as fresh thyme and basil to lend a subtle earthiness and floral flavor to the glass. This wine was created to deliver a balanced experience while attempting to elevate the honey to new heights.
Ginger Bay (a honey wine with natural flavors): In this honey wine, we used raw ginger root, peeled and crushed by hand, as well as dried bay leaves to concoct a smooth layer of spice and earthy undertones.
Cherry Melomel (a honey-cherry-lemon wine with natural flavors): Inspired by the infamous Vikings Blod recipes from Europe and Scandinavia, this formula was co-fermented with raw wildflower Vermont honey, New York-grown cherries, fresh-squeezed lemon juice, and black tea.
HARD CIDERS
The first recorded references to hard cider date back to Roman times. In 55 BCE, Julius Caesar found the Celtic Britons fermenting cider from native crabapples. Humbiont Fermentary crafts wild-fermented sparkling and still ciders from Vermont’s heirloom apples infused with toasted oak. Their signature hard ciders include Woo-Way, Woo-Way Reserve, Proception, and Proception Reserve.
